As a part of my decision to eat more in season, organic, vegetables and fruits, I have been learning how to cook with what is in season and use simple ingredients to enrich the natural flavors. These honey roasted carrots are a perfect example of that. From the time I was a little girl, I always loved a little sweetness on my carrots. In fact, I put honey on everything including my binky (otherwise known as a pacifier).
Now, that I’m a grown-up, I still love adding honey to my recipes and maple syrup too. These honey roasted carrots are sweet and tender and are the perfect addition to any winter dish. They accompany a simple roasted chicken wonderfully and I love making them with salmon too! This recipe is super flexible. You can add as much or as little sweetness as you like and tailor it to fit your needs. If you aren’t interested in the sweetness, you can simply omit the honey and/or maple syrup from the recipe and have simple roasted carrots. Feel free to swap out the ghee for olive oil, butter, or whatever oil you prefer to use.
This recipe requires few ingredients and very little skill in the kitchen. It’s perfect with for those with a busy schedule that want to use whole ingredients and don’t want have to completely restock their pantry. All of these items are basic staples that I’m sure you can find right in your kitchen pantry!

Honey Roasted Carrots
2 small bunches of carrots (12-15 carrots)
1 tablespoon ghee
1 tablespoon honey
1/2 teaspoon pepper
1 teaspoon salt (kosher or sea salt)
1 tablespoon maple syrup
Preheat oven to 375 degrees.
Slice carrots into evenly shaped and size pieces.
Place on a sheet pan in a single layer, to ensure even roasting. (see photos)
Add ghee, honey, salt, and pepper to pan.
Place in the oven.
Toss carrots every 10 minutes until done.
I bake mine for approximately 30 minutes. Depending on the size of your carrots and strength of your oven the time may vary. Just continue to toss them every 8-10 minutes, to ensure even cooking on all sides. Carrots will be tender and slightly deeper in color.
Drizzle with maple syrup, toss and serve.
