Bagels have been a growing weakness for me and could be partially to blame for my thick physique! There is not denying, I love good food and love to experiment in the kitchen with new recipes and family favorites. During my last two years of college, my morning visits to Starbucks grew in number. I went from not being a coffee drinker, to preferring lattes [my drink of choice, which deserves it’s own post, but to share an at home recipe, I need to acquire a Nespresso machine!] and from skipping breakfast, to requiring a bagel twice a week. Bagels are not helpful for your waistline, so I have been dealing with the latter post grad. But, this bagel sandwich is so good and is worth indulging in every now, and then!
I love all kinds of bagels, there is no discrimination here! I will admit that my go to bagel, for brunch, lunch, or when I’m feeling a little more hungry than usual, is a bagel with cream cheese, tomato and cucumber. This bagel sandwich is hearty, refreshing and can be served for breakfast, or lunch! I don’t know about you, but I am a huge fan of versatility. This sandwich is versatile and includes a couple of veggies, to make us feel a little less guilty about eating a bagel! Or at least that logic works for me!
This bagel sandwich is easy and will have your guests thinking you slaved over it for a bit, due to it’s powerful favor punch!
- 1 Everything Bagel
- 2 Tablespoons Cream Cheese, plain or onion flavored
- Cut bagel in half
- Toast bagel to desired texture
- Spread cream cheese on each half of the bagel
- Slice cucumber and tomato
- Layer cucumber and tomato on bottom half of bagel
- Top with other bagel half
