I know that Taco Tuesday is a thing, and today is Wednesday, so obviously I’m a little bit off. However, I hope you that after making this Creamy Salsa Verde Chicken Taco recipe you will forgive me and love me! I basically live for Mexican food, tacos and anything of that sort, but sometimes I like to switch things up a bit. Trader Joes Salsa Verde is the perfect way to kick things up, without making your tacos too spicy. This Salsa Verde Chicken Taco recipe is quick and an easy meal that I can just throw together, but is still hearty and delicious! This recipe only requires 3-4 ingredients, can be served a number of different ways and is the only Salsa Verde Chicken Taco recipe you need!
 
After trying a few different salsa verde chicken taco recipes, I found what I liked from each and what I didn’t like from each. I was then able to create the perfect  recipe for me. I am going to make the disclaimer straight off that this recipe probably isn’t the healthiest, but it is by far the easiest, creamiest and tastiest. So let’s just say it passes my test! I also wanted to mention that this recipe is very versatile and there is definitely a healthy alternative (opt for less or no cream cheese), but be sure to see the notes on the recipe card below!

Creamy Salsa Verde Chicken Tacos

Place chicken breasts into pot (or crockpot) and cover with entire jar of Trader Joes salsa verdeCreamy Salsa Verde Chicken Tacos
Cube up the cream cheese into smaller chunks, so that way it will melt evenly, and add in with chicken and salsa

Sprinkle the package of Hidden Valley Ranch seasoning over top of everything and give it a stir to mix things together
Creamy Salsa Verde Chicken TacosCreamy Salsa Verde Chicken TacosCreamy Salsa Verde Chicken TacosCover and cook on low to medium low heat for about 1 hour and 15 minutes until the chicken is tender. If using a crockpot cook on low setting for 4 hours.

Remove tender chicken from the pot and shred with two forks. This should be easy. If the chicken doesn’t want to shred, it needs to cook a little longer until shredding is easy.

Return the shredded chicken to the pot and allow it cook for an additional 15-20 minutes to soak in all of the flavor.

Ingredients
  1. 3-4 chicken breasts
  2. 1 jar Trader Joes Salsa Verde
  3. 1 package of Philadelphia cream cheese (8 ounces)
  4. 1 package of Hidden Valley Ranch Seasoning
Instructions
  1. Place chicken breasts into pot (or crockpot) and cover with entire jar of salsa
  2. Cube up the cream cheese into smaller chunks, so that way it will melt evenly, and add in with chicken and salsa
  3. Sprinkle the package of Hidden Valley Ranch seasoning over top of everything and give it a stir to mix things together
  4. Cover and cook on low to medium low heat for about 1 hour and 15 minutes until the chicken is tender (If using a crockpot cook on low setting for 4 hours)

Notes
  1. This chicken recipe can be served in a taco, on a salad or even over a bowl of rice! To make this recipe a little healthier, cut the amount of cream cheese in half and only add in a half of a package. You can also leave of both the cream cheese and the ranch seasoning, for a real healthy option. The salsa is so great with the chicken on its own!
