There is no doubt I love a good party. Want to really make me happy? Throw in a cocktail and send me to a cocktail party! I am continuously inspired by pretty floral arrangements and party platters filled with the most glorious appetizers. A few weeks ago, I found myself yearning for a little cocktail party. I was thinking wine, cheese and maybe a little bruschetta? Between my current obsession with burrata and having some extra pesto on hand, from making this, I later found myself testing this Bruschetta with Pesto and Burrata recipe. And let’s just say, it did not disappoint!

I love how this recipe combines decadence and simplicity, all while being easy to make. The only cooking required is sautéing the tomatoes, but you could easily serve them fresh, without cooking, and it would be equally as delicious. The homemade bruschetta adds a savory flavor and satisfying crunch to this dish. To really impress your guests, take a little extra time to heat your bruschetta on the grill. Not only will this amplify the taste, but the grill marks are sure to excite your guests!

Traditionally, bruschetta is made from a hearty bread that has been grilled, brushed with olive oil and rubbed with fresh garlic. In this case, I decided to skip rubbing with raw garlic, as I already have a good garlic flavor going from the tomatoes. However, if you choose to skip sautéing the tomatoes, you might want to go for rubbing the bread with raw garlic.

To say that burrata is a delicacy is a true understatement. If you’ve never had the opportunity to greet your tastebuds with this cream filled mozzarella, you are missing out. Easily overlooked, you can find burrata at your local Whole Foods or Fresh Market. If the grill marks on your bruschetta didn’t surprise your guests, this creamy burrata is sure to do the trick!

Bruschetta with Pesto and Burrata

Ingredients

1/2 French baguette

1 pint cherry tomatoes-I like to vary the colors

1 garlic clove

fresh Pesto

1 burrata ball

Instructions 

If you are going to use the grill to toast your bruschetta, warm the grill while prepping other ingredients.

Slice the baguette diagonally in 3/4 to 1 inch slices. But, feel free to make each slice as thick, or as thin, as you’d like. Place your bruschetta on the grill, for just a few minutes on each side until you can see nice grill marks. If you don’t have time for the grill, that’s totally ok! Simply place your bread under the broiler for just a few minutes. These will burn easily so you want to be extra careful and keep a good eye on them!

Meanwhile, slice cherry tomatoes in half.

In a small, or medium, saucepan. Heat 1 tablespoon of olive oil and add 1 minced garlic clove, over a low flame. Cook for one minute. You don’t want to burn the garlic! Add in the sliced tomatoes and cook over a low to medium flame for about 10 minutes until they have softened. 

Remove burrata from it’s container and onto a cutting board. Slice the burrata in thin layers and then repeat crossways. The goals is to make the burrata easily spreadable, a good chunky base for the tomatoes. 

When your bread is finished toasting, begin by adding a thin layer of pesto, followed by a generous helping of burrata and finish it off with a few tomato slices.  Complete the same process to each slice of bruschetta.

Arrange on your favorite platter. Garnish with basil leaves!
