When it comes to food, I don’t always make the healthiest choices. However over the past year I have made a few good changes to my diet, including cutting out a huge portion of red meat. I absolutely love food, and love to eat. I mean, who doesn’t love a good meal?
With the new year upon us, I know that I can’t be the only one who has made the choice to shift their diet in a better direction. I need a few more leafy greens and a little less dessert! My mom made fudge for Christmas and I literally almost ate the entire batch! I am a firm believer in not depriving myself. If I want to have something, I obviously do so. However, I have found a few ways to adjust what I eat, so that I am able to still have my favorite foods, but just have a little healthier version.
Breakfast hasn’t always been my thing. Some days I wake up starving, other days I could go hours without eating. It just depends. Generally, when I am starving in the morning, I don’t want “breakfast food.” While I do really like bacon and eggs, sometimes a pizza or a little cheeseburger sound better. I just like to skip straight to lunch. But, if I want my diet to be pretty good throughout the day, I have to start with something semi-healthy for breakfast. If not, I’m just like “We’ll I already had Hardee’s for breakfast, so I might as well just go ahead and eat the brownies too!” Which is never the right answer.
Lately, I have become a huge fan of Avocado Toast. At first, I just couldn’t understand the hype. I’m not always wild about guacamole, I’m more of a queso girl- if you know what I’m saying. Cilantro just isn’t my thing. So naturally, I just couldn’t seem to see how I would like Avocado Toast. But, let me tell you. This is my new go-to breakfast. It is easy and fast to make, pretty healthy, keeps me full for a long time, and is delicious! What more could I really ask for? Plus, avocado toast is always Instagram worthy. It’s beautiful colors make it irresistible and always on the #brunch menu! If you haven’t given it a try, I would highly recommend it. It is quick, easy, and I promise you won’t be disappointed! Here is my favorite recipe:
- 1 slice of bread [I like to use Ezekiel]
- olive oil for drizzle
- 1/2 teaspoon sea salt, divided
- 1/2 avocado, mashed
- 4 cherry tomatoes, quartered
- Toasted bread to desired texture
- Drizzle olive oil over toast
- Mash avocado
- Add 1/4 teaspoon of sea salt to avocado
- Spoon mixture onto toast
- Quarter cherry tomatoes and place on top of avocado
- Sprinkle with remaining sea salt
- Add poached egg to toast for an over the top finish!
